When I saw the Les Trois Petits Cochons Sous-Vide Egg Bites with prosciutto and gruyere at the grocery store, I was intrigued. I wasn’t sure how eggs would fare in a sous-vide, but I do love prosciutto and gruyere. The fat wasn’t as high as it is in a lot of pre-made egg dishes, and it was cheap, so I decided to give it a try.
Of course I did not read the serving instructions when I first opened it, so my first was bite cold. It popped with flavor immediately, and my mouth was filled with the gruyere, prosciutto, and green onions. The texture wasn’t very pleasing, which was the point where I read the serving instructions. I was supposed to heat it up first. Oh, okay.

After heating the rest of the egg bite in the microwave, I dug in again. This time, the texture was perfect: fluffy, moist, and creamy. Les Trois Petits Cochons describes it as inspired by their quiches, and it is quite like the filling of the quiche, but without the crust. The flavors subsided with heat, though, which I missed. I think if I were to try it again, I would try eating at room temperature to see if I got a better texture and the strong flavors.
I plan on buying this again. There are other flavors I’d like to try as well (my store also sold spinach and feta, but it was sold out). For the price ($1.59 at Yes! Organic Market), I don’t think I could find a better breakfast option, though I would probably eat 2-3 at a time. Even eating multiple, the price is still hard to beat at your local breakfast take outs.
